Iguana, your new favorite meat?

It seems a problem’s growing in Puerto Rico: Iguanas. According to Jeremy Hobson of “Marketplace,” the island’s lizard population has exceeded 4 million, outnumbering humans and causing a bit of trouble for local wildlife. These fat lizard kings think they’ve got it made, but fate is headed their way. And by that, I mean iguanas are headed my way. Or, more specifically, I’m going to start eating iguana.

“[Authorities] want to slaughter the iguanas, then sell them overseas to butchers and restaurant owners,” U.K. exotic meat distributor David Gura tells Hobson.

Yes, the growing exotic meat trend—which is extremely popular in U.K. gastropubs, according to Gura, who also owns an exotic meat gastropub—will be called into action to fight the reptilian scourge. According to the report, the first wave of tasty iguana meat will arrive in the States first, mainly because Puerto Rico is a U.S. territory, but probably because our national appetite is peerless.

I’ve never tried iguana, but I hear it’s akin to alligator, or even rattlesnake, with slightly fishy accents. Grill a few of these bad boys, slap them in a taco with mole sauce and you’ve got a perfect companion to New Belgium’s new Lips of Faith offering Cocoa Molé, which tastes just like the name suggests. Or, skewer them with jerk sauce and enjoy alongside a pint of the revamped He’Brew Genesis Dry Hopped Session Ale—its citrusy hop notes will illuminate your cold-blooded-vertebrate-on-a-stick.
