One of my favorite trends in the beer industry is the imperialization of farmhouse ales. Don’t get me wrong, quaffable saisons and bière de gardes still reign supreme, but when the weather’s cold and I’m craving something a touch funky but also warming, the amped-up version of Wallonia’s finest hits the spot—especially when executed perfectly like Funkwerks Tropic King.
This imperial saison, which clocks in at a manageable 8.0% ABV, just bursts with vitality. Its nose showcases a playful fusion of New Zealand Rakau hops and Belgian yeast, combining tropical scents like pineapple, melon and banana. Similar notes stream over a bed of soft malts on the tongue, creating one of the most exotic saisons out there. Along the way, light tartness joins with prickly ginger and black pepper, and jabs at the tongue’s sides—the beer’s creamy mouthfeel is a soothing foil to these sharper notes. Of course, then there’s the alcohol: Thoughtfully masked behind Tropic King’s bright flavors, it’s still present enough to leave your chest with a slight glow after each sip.
