Your Daily Pint for Tuesday, Dec. 3, 2013, is: DIEU DU CIEL SOLSTICE D’HIVER
What it is: A 9.8%-ABV barleywine from Quebec.
What it tastes like: Liquefied strength. Even after aging for four months before its release, huge, bitter hops still carry a lot of weight; then, there’s all that plum-and-molasses malt. It’s a loud yet delicately arranged opus of bitterness, hop spice, alcohol, woody tannins and muscular malt.
Listen to: A Canadian seasonal deserves a Canadian seasonal. Ladies and gentlemen, Celine Dion on “O Holy Night!”
Pair with: A big antipasto platter. This bold beer can stand up to strong aged cheeses, pickled vegetables and fatty aged meats.
