Mace Mead Works in Dayton, Wash., has a certain speakeasy coolness: The walls are scuffed red brick,  a player piano plinks in front, and through a window behind the narrow bar, you can glimpse owner Reggie Mace’s meadery. He also crafts some pretty killer honeywine cocktails tailored to sweet and dry meads alike. Here, he lets us in on the secret to mead mixology: matching the mead to the cocktail.
