How long does it take to turn the average cask? Are they under some sort of top pressure to keep from spoiling?

Stan - once a cask is tapped, oxygen enters the vessel and spoilage begins almost immediately. The beer is at its optimum flavor for only a few days. A device such as a cask breather, which essentially inserts a blanket of C02 over the beer, in the cask, to prevent contact with oxygen, can extend the shelf life to a little over a week.

From brewer to distributor to bartender to drinker, there needs to be a high level of awareness to ensure the beer reaches the drinker in its best state.
