Not just reserved for stouts, oats are increasingly invading American pale ales. Why? SØLE Artisan Ales’ head brewer Joe Percoco says they “add body and a special quality that can only be described as silky.” The idea isn’t new; Lagunitas first brewed its Equinox Pale Ale with oats way back in 1995.

Three to try:

Bell’s Oatsmobile
A new year rounder hopped with a grassy, tropical trio of Mosaic, Equinox and Glacier

SØLE Kushy Clouds
A dry, citrusy brew periodically released in cans by the year-old Pennsylvania brewery

Burial Ceremonial Session IPA
A rotating hop lineup keeps each and every batch tasting both new and familiar
