“The Single Man’s Guide to Cooking With Beer” author Streeter McClure dreamed up this simple, IPA-infused coleslaw that’s perfect for picnics.

Makes: 3 to 5

  • 1 medium head green cabbage, shredded
  • 1 medium head red cabbage, shredded
  • 1 carrot, shredded
  • 2 tablespoons green onion, minced
  • 1⁄2 cup mayonnaise
  • 1⁄3 cup sugar
  • 1⁄4 cup India Pale Ale (try Surly Furious or
  • Victory HopDevil)
  • 1⁄4 teaspoon celery seed
  • 1⁄4 teaspoon paprika
  • 1⁄4 cup Dijon mustard
  • salt and black pepper


• Combine the shredded vegetables and green onion in a large bowl.

• In a separate bowl, combine the mayonnaise, sugar, beer, celery seed and mustard; season with salt and black pepper to taste.

• Add the dressing to the cabbage mixture and toss. Refrigerate 1 hour before serving.
