Guinness Barbecue Shrimp

"A lot of recipes come from hanging out in my backyard," says Joe Monteiro, the force behind Miami's A Fish Called Avalon. Such was the case for this simple seafood barbecue, enlivened with honey, chili, cilantro and stout.

Makes: Serves 2-4

  • 10 fresh jumbo shrimp
  • 2 jalapeno peppers
  • 2 garlic cloves
  • 1 shallot
  • 12 ounces Guinness Extra Stout
  • 1 cup olive oil
  • 3 tablespoons honey
  • 1 bunch cilantro
  • 1 tablespoon fresh chili powder
  • salt to taste


  • Set shrimp aside and blend remaining ingredients together in a blender to create a marinade.
  • Coat shrimp in marinade
  • Cook shrimp on a barbecue on medium heat for 3 to 5 minutes or until cooked
