A honeyed beer plus more honey plus apple juice can only equal a sweet beer cocktail; a dose of gin gives this drink its edge. Created by Texas bartender Leslie Ross, the cocktail was awarded first place at the Caorunn Gin Storytellers Cocktail Competition in summer 2012.

Makes: 1

  • 1.5 ounces Caorunn Gin
  • 2 ounces fresh-pressed apple juice
  • 2 spoonfulls heather honey
  • 34 ounce Pimm's No. 1
  • 2 ounces BrewDog Dogma


Combine the gin, apple juice, honey and Pimm's in a mixing glass; shake. Strain over ice into a Collins glass, leaving enough room to top off with the beer. Fill the remainder of the glass with the beer and garnish with apple slices. (Optional: Rim the glass with powdered heather honey prior to pouring.)
