Pear Saison Butter

Whoever you need to “butter up” this holiday season will certainly appreciate this creamy, saison-infused spread on holiday rolls and breads.

Makes: 4 cups

  • 8 pounds pears, peeled and cut into 1-inch chunks
  • 1 12 cups saison
  • 3 cinnamon sticks
  • 12 teaspoon salt
  • 1 vanilla bean


1. In a large pot, combine the pears, saison, cinnamon and salt. Split the vanilla bean down the center and scrape out the seeds; add the seeds and the bean to the pot. Bring to a boil over high heat. Reduce heat to maintain a lively simmer and cook about 30 to 45 minutes, stirring occasionally, until the pears start to break down. Reduce heat to low and continue cooking for approximately 5 to 6 hours, stirring occasionally, until butter is very thick and has turned a caramel color. 

2. Remove the cinnamon sticks and vanilla bean. Transfer butter to eight 4-ounce jars and let cool completely. Cover and refrigerate for up to one month, or freeze.
