There’s no mistaking this brew’s Belgian tripel base, with bubblegum and juicy fruit enlivening the sweet bouquet. Classic Belgian flavors echo in the sip with bubblegum and lemon dancing on a smooth, creamy body. A huge dose of white pepper brings it to a spicy, dry conclusion, with a touch of alcohol warming in the finish. It’s an excellent Belgian golden, but would be even better if the flavors from aging on Jamaican allspice wood—which emerge only as a touch of astringency in the very back—were more apparent.
