Huge lactic acid and fruity apple note enliven the bouquet. Wild barnyard flavors press across the tongue with invigorating tartness, hay and sharp cheddar; wonderfully fruity apple and pear sweeten the sip. Underneath, a touch of earth lends some depth, while a vinous berry note (thanks to time in red wine barrels) clings into a very clean finish. The wildness of the beer is pronounced, while some of the telltale saison characteristics, like peppery spice, are absent.
