This release from Jester King was brewed with agave nectar, epazote and ancho chiles, then aged 11 months in mezcal barrels and inoculated with wild yeast, Brettanomyces and souring bacteria. The result is a beautiful exploration of wild character and compelling ingredients. Sweet and tart cherry pie scents engage the nose, with dry hay notes rounding out the bouquet. Sour and sweet cherry rushes over the tongue with some earthiness emerging at the center to balance the sip. A perfectly tempered chile spice starts to prickle the back of the throat and lasts into a dusty, dry finish. The heat and flavor complexity builds, culminating in a wonderfully cogent and remarkably drinkable sip.
