Oddwood, a recent side project of Adelbert’s Brewery’s Taylor Ziebarth, ferments all its American wild ales in oak barrels. Here, the barrel lends a woody warmth to the tart blonde ale base, wrapping chardonnaylike aromas and an aura of oaky funk around fresh lemon zest and peppery spice. On the sip, restrained Brett earthiness and fresh-harvested hay flavors ground big, sunny lemon custard tartness that lingers into the finish and makes the mouth water.
