Merry Monks

The scents of sweet, spiced bread—clove, ginger and soft dough—mingle in this tripel’s aroma, with a drop of lemon on the fringes. That citrus takes center stage on the sip, joining juicy tangerine before white peppercorn spice and clove sweep in. Lemon pith bitterness closes the swallow, but doughy- sweet malts stick after it’s gone. There’s an almost witbierlike quality to the beer’s clove and lemon interplay, but elevated alcohol and citrus flavors mark it a tripel.
