Once known as Sam—an acronym for the Simcoe, Amarillo and Mosaic hops used to brew it—this resinous IPA’s name was changed, but the aroma remains as dense as ever with green onion, garlic, orange peel and catbox; juicy starfruit and papaya thread the bouquet. Doughy malts pave the way for bright, grapefruity flavors and bold bitterness that slides away at the swallow, but their sweetness is gentle. This is a hop delivery engine.
