This blend of young and old wild ales from Belgium’s oldest active lambic producer is a challenging beverage, but one well worth conquering. A menacing acidity looms at the edges of the aroma while dried hay, mint and earthy rhubarb comprise its base. Prepare yourself before the sip; lemon juice and vinegar squeeze the palate mightily, paving the way for citrus pith and the barnyardlike funk of wet, fermenting hay. Oaky vanilla and peach flash before a drying, salty swallow, softening the liquid’s impact just enough to prompt one taste after another.
