Scaldis Prestige de Nuits

Vino bookends this sanguine ale, a version of Dubuisson’s Scaldis Noel aged six months in barrels that previously held Nuits-Saint-Georges wine that is produced in small communes in France’s Burgundy region. Jammy grapes lead the nose and are soon met by cherry and dried oak; a sip draws out notes of bread crust, fermenting tobacco and a hint of leather before restrained, Flanders-like acidity cleans the palate. Rich, earthy pomace fumes rise after the swallow for a vintner’s finishing touch.
