Great Raft transforms its All My Tomorrows saison through chardonnay barrel-aging, Brett fermentation and a month of rest atop 600 pounds of Louisiana peaches. While that process floods the beer’s aroma with peach pits, juice and fuzz, its flavor is more nuanced. Notes of butter and melon spread across supporting oak, well-measured shots of vinegar and sweet peach syrup while graham cracker malts give the impression of the crust on a peach pie.
