This non-carbonated mead pours very pale yellow, like a viscous green tea in the glass. The aroma is intense, with alcohol, thistle flowers, dry grass, honey, and a considerable level of spiciness. The flavors are equally intense, savory in their herbal and wildflower qualities. The mead begins with an explosion of sweetness, with a faint pineapple that is short-lived, followed by apricot and peach flesh tastes that linger. This mead has a thick, heavy texture and finishes quite dry.
