candi sugar or candy sugarCaramelized sugar syrup.
  
caramely Having the scent or taste of caramel.
  
carbonated The degree to which of carbon dioxide (which gives beer its effercesence) is dissolved in beer. A highly carbonated beer may be zippy, prickly or Champagnelike, while less carbonated beers are creamy, velvety or smooth.
  
carbonationThe amount of carbon dioxide in beer, which gives the beverage effervescence.
  
caskA wood, steel or plastic vessel in which beer is matured and served through. Unlike kegs, casks contain beer that has not been filtered or pasteurized, so its yeast allows the beer to continue fermenting and developing.
  
cask-conditionTo allow beer to mature in a cask.
  
catty Musty, urinelike aroma; see “oxidized.”
  
certified beer serverA bartender or other beer professional who has completed the first level of the Cicerone Certification Program.
  
Certified CiceroneA beer sommelier or other beer professional who has passed the second level of the Cicerone Certification Program.
  
chalky A dusty, powdery or overly sedimentary mouthfeel.
  
cheesy A cheeselike off flavor caused by old hops; see “Trans-2-nonenal.”
  
chewy Having a thick, viscous, palate-coating body with abundant maltiness.
  
chill hazeA hazy or cloudy appearance in beer formed when, upon chilling, proteins join in large enough compounds to become visible.
  
Chlorophenolic   A plasticlike, chemical-smelling aroma.
  
chocolaty Having the flavor or scent of chocolate. Derived from chocolate malt and, more rarely, cocoa.
  
Cicerone Certification ProgramA three-level certification and education program for beer industry professionals that focuses on knowledge in five areas: storage, sales and service; brewing; tasting and flavors; beer styles and culture; and beer-food pairing. The three levels of certification are: certified beer server, Certified Cicerone and Master Cicerone.
  
cigarlike Evocative of tobacco in taste or aroma.
  
citrusy Having the smell or taste of lemon, lime, orange or grapefruit; typically obtained from hops or esters.
  
cleanEasy-drinking and without off flavors or undesirable traits.
  
clearWithout visible particulate matter.
  
clovelike Smelling or tasting of cloves; derived from yeast esters.
  
cloyingSticky, tacky or sickly sweet in taste and mouthfeel. In beer, often the result of excess malt or a lack of hops.  
  
coconut Having the taste or scent of coconut; usually a characteristic of oak aging.
  
coffeelike Having the smell or flavor of roasted coffee beans or brewed coffee. Not burnt.
  
colorThe hue of a beer, determined by the types of malt used in brewing.
  
colorful Having a notable hue, or multifaceted in flavor.
  
complex Multifaceted in flavor and/or smell.
  
conditioningThe maturation phase that lends carbonation to beer.
  
contract beerBeer produced for one company by another company.
  
contract brewingAn agreement between two companies in which company A (a brewery) produces beer for company B (another brewing company, a pub or another entity).
  
coolship or koelschipA large shallow, open fermenter in which fresh wort is exposed to wild yeast and microfauna.
  
corked Having the slight taste of cork; denotes a beer that has been aged improperly or was sealed with a faulty cork.
  
cornlike Contains or evokes tastes or smells of sweet corn; acceptable in styles that feature corn as an adjunct, such as light lagers.
  
crackerlike Having a crisp, clean malt flavor akin to crackers, as in pilsners.
  
craft beerA subjective term that describes "quality beer."
  
craft breweryA brewery that brews craft beer.
  
creamy Having the smooth consistency of cream, applicable in beer to head or mouthfeel.
  
crisp Dry and firm in bitterness, mouthfeel or flavor.
