Eisbock Reviews

Eisbocks are products of simple science: They’re crafted by freezing doppelbocks (hence the eis) and removing the ice, thereby concentrating the brew. (After freezing, the beer is lagered for balance.) These beers have the same ingredients and aromas as the doppelbocks they once were, but their flavors, mouthfeel and alcohol are inflated: Rich, sweet malt, some dark fruit notes and smooth alcohol make up the swallow, a full body with big carbonation carries the flavor through the finish, and an ABV inside the 9 to 14 percent range makes them dangerously drinkable.

Pair: These super-rich beers require luxurious pairings; think chocolate lava cake, lamb chops and washed-rind cheeses.
